Out for Coffee

Last August while in Norway I had the pleasure of going out for coffee a number of times. There was something about the feel of the coffee shops there that I LOVED!

The warm yet neutral feel… the subdued splash of color the heather on the table lent..  Everything felt so clean and beautiful. Now I’m longing for some potted heather to place on my table.

You see that folded pancake next to my hot chocolate? That’s a svele. It’s like a pancake but sweeter. You will find them in almost every coffee shop in Norway. Usually served folded in half with butter and sugar or butter and brown cheese inside. They are delicious!

Svele Recipe

  • 5 eggs
  • 2.5 dl sugar
  • 1 heaping tsp natron
  • 1 heaping tsp hornsalt
  • 1 liter kefir
  • 1 liter all purpose flour
  • 75 gr butter (melted)

Wisk together the eggs, sugar, natron and hornsalt. Alternate adding the kefir and flour little by little. Stir in the melted butter. Let the batter sit a few minutes. Fry like pancakes.

Easier Americanized version

  • 3 eggs
  • 1 cup sugar
  • 3.5 tsp baking soda
  • 1 tsp baking powder
  • 4 1/4 cups kefir (or milk/buttermilk)
  • 4 cups all purpose flour
  • 1/4 cup butter (melted)

I think I will make these soon! They will certainly bring some joy to January in Wisconsin!
